It can be down right impossible to pack enough food and gear to make delicious and varied meals, right? Wrong! With the right know-how you can make amazing food without a lot of gear or ingredients. I know what you're thinking, 'everyone makes scrambled eggs; this isn't special.' But hear me out. Most scrambled eggs that people make are lifeless, bland mounds of disappointment and regret. Especially the eggs that are made when camping. But when you master this recipe sublime, cloud-like eggs will be your reward.
Usually we would be using simple non-salted stick butter, but not everyone will have a cooler or a refrigerator that can fit 'extras' like butter. Clarified butter will do what we need, but if you can bring stick butter, use that instead. As you can see, I only listed 3 ingredients without any amounts. That's because it depends on how much you are making. The ratio is this : for each egg add 1 tablespoon of water and 1 tablespoon of butter (clarified or not).
Add your ingredients to a sauce pan. Yes, a sauce pan. A pot. Not a frying pan like you're probably used to. I like to leave the egg yolks unbroken at first. If one breaks while cracking, that's fine. Start off away from the fire and just stir, getting the egg whites and water to mix. Then put the pot over the fire. Once the eggs start to get warm you can break the yolks and get the eggs all mixed together. At this point the butter should start to melt, too. Once the butter is melting take the pan off the heat and keep stirring. You want to keep taking the eggs off the heat and then back on. We're looking for a slow warm that barely cooks the eggs and allows the butter to melt, but nothing more. It's usually going to be a routine of 30 seconds over the fire, 15 seconds off. Once the butter is completely melted and mixed together you can leave the eggs on the fire a little bit longer. Keep stirring until your eggs just come together. Your eggs will not seem done, and they aren't. But take it off the heat anyway. The residual heat in the pan will take your eggs to perfection. 6 Cups Rolled Oats
2 Cups Pecans or Almonds
½ Cup Vegetable Oil
½ to 1 Cup Maple Syrup
1 Cup Dried Cranberries
Sure, you could make granola at home before you head out to the campsite. But when you make your granola fresh and over an open fire you instill it with tasty qualities that add flavor, aroma, and texture.
Get a cast iron pan nice and hot. Add your nuts and toss them around. It's a good idea to take the pan off the fire as you toss them around to ensure you do not burn them. Once they start to have a nice nutty smell you can add the rolled oats. Cook this slowly over the fire until it becomes brown and nutty.
Take the pan off the heat and add the Vegetable oil and the Maple Syrup. Depending on the consistency you like, you may want more or less syrup. 2 Diced Medium Potatoes
8 Eggs, stirred
1 Chopped Onion
2 Chopped Peppers (your choice)
2 Tablespoons Butter
This wholesome breakfast is an easy camping meal and a great way to start the day. It cooks up in one pan and serves about four.
First, add 1 Tablespoon of Butter into your cast iron pan and put it over your fire. Melt it and spread it around.
Second, add the Potatoes, Onions, and Peppers. I like the Potatoes to be in chunks and for the Onion and Peppers to be chopped, but it's your choice. Cooked these until the Potatoes are tender and the Onions and Peppers are nice and cooked. It takes about 20 minutes, but it depends on your fire.
Third, add the next Tablespoon of Butter and, once it's melted, add the Eggs. The Eggs will fill all the spaces in between the Potatoes, Peppers, and Onions. But to ensure even cooking time, cover the pan with lid or tin foil and let it cook until the eggs are nice and ready, about 4 minutes.

8 Hot Dogs, Chopped
1 Small Onion, Chopped
8 Ounces Chili
3 Tablespoons Barbecue Sauce
12 Hot Dog Buns, gutted
This is a terrific twist on the old style kind of hot dog. These still have the same old Hot Dog flavor so kids will still love them, but now it comes with a few nice depths of flavor and sustenance so adults tend to like them, too.
Take all the ingredients, except the gutted Hot Dog Buns, and mix it in a bowl. Lay out each Hot Dog bun on its own sheet of tin foil. Fill the Buns with the mixture and then wrap the tin foil so the whole thing is sealed. You can grill these over a flame for about 20 minutes. Or you can put them deep in coals and cook them for 15 minutes. Timing obviously depends on how much heat your packing, but we're just looking to cook the Hot Dogs all the way through.

3 Baked Potatoes
9 Strips of Bacon, cooked
Sharp Cheddar Cheese
Stick of Butter
This recipes uses a lot of leftovers and turns them into a great meal! Take 3 Baked Potatoes and cut them each 5 times. Do not cut them all the way through, we want 6 equally sized segments across the potato. In each Segment add a small piece of bacon, ham, and the cheese.
Lay each potato out on its own piece of tin foil. Put a little bit of butter on the tops of each potato and spread it around. Seal up the potato in the Tin Foil, find a hot spot in your grill or fire, and cook for about 20 minutes. Make sure you count the number of Potatoes going in and coming out, as they tend to look a lot like darkened coals.

2 Medium Sweet Potatoes
2 Tablespoons Olive Oil or Vegetable Oil
1 Clove of Garlic, Chopped
1 Teaspoon Chili Powder
1 Packet of Ranch Dry Mix
Wash the Sweet Potatoes and dry them. Then cut them in lengthwise strips, about 1/3 an inch wide on each side, so they look like fries. The important thing is that they are uniform so they can cook up at the same time. If you wanted to produce a crispier Fry, and you have the time, soak the fries in water for 30 minutes and then let drain for an hour before continuing. If not, that's fine, they'll still be delicious.
Take all the ingredients and mix them in a bowl. We want an even coverage of all the tasty spices and the dry mix. Lay these fries out on a piece of tin foil that's over a sheet pan. Place the pan on a grate over an open fire or on the middle rack of a grill. We're looking to cook the potatoes and make the outsides nice and crispy. Depending on your heat you want about ten minutes a side, flipping once.

1 Pound Fish Fillets, One half pound per person, serves two
1 Cup Buttermilk Pancake Mix
1 Cup Beer
1 Cup Flour
¼ Cup Cooking Oil
First step is to open the beer and take a sip. We want the Oil to be nice and hot right when we have finished preparing our Fish Fillets, so we should heat that up now. Nice job! Take another sip of beer!
We need our Fish Fillets to be cleaned and dried. You COULD buy these Fish Fillets from a store, but hopefully you caught, skinned, cleaned, de-boned, and dried them yourself (because I can't do that). Anyway, take your Fish Fillets and dredge them in the Flour. We want just an even coating of flour all over the fish. Take another sip.
Now we want to mix the Pancake mix and about ¾ Cup of beer together. The rest of the beer is for you. Mix it with a fork until it is smooth. Now we want to take our floured Fish Fillets and dip them in the Batter. Again, we want an even coating.
Put these Fish Fillets into the oil and cook until the outside is Golden, Brown, and Delicious. Once the outside is done the inside should be nice, moist, and shiny. Only cook two at a time as over crowding the pan when frying is a big No-No.
Once they are all done (and you ate the first Lightly Fried Fish Fillet just to make sure it was done and then finished the beer) let them drain a little bit on a paper towel. After that you can sprinkle a little dill, pepper, or lemon on them, but that's not really needed. They are pretty perfect just the way they are.

1 Pizza Crust
1 Can Tomato Sauce
1 Cup Cheddar Cheese
1 Cup Mozzarella Cheese
20 Slices of Pepperoni
The Dutch Oven is a great and effective place to cook a pizza. Take out your Pizza crust and place it in the bottom of your Dutch Oven. If you want to bring Pizza Dough, just let the Dough cook up for about 5 minutes before adding the rest of the ingredients to give yourself a nice base on which to build.
Next, layer out your Tomato Sauce. Try not to use too much, a little bit goes a long way. You can substitute the tomato sauce for things like Buffalo Sauce, Barbecue Sauce, or Store bought Pizza Sauce.
Now Add the Cheddar Cheese. Spread it out so you have even coverage. I prefer to have my Pepperonis not too crispy so I like to add them next. Make sure they are flat and that you have even coverage. Now add the Mozzarella.

¾ Pound Bacon
¾ Pound Ground Beef
20 Ounces Canned Baked Beans
½ Cup Steak Sauce or Barbecue Sauce
1 Can of Biscuits
This tasty and filling Dinner is just perfect for cold evenings. Grill up the bacon in a skillet at medium heat. Once done remove it from heat, drain, and chop. Now cook the Ground beef until it is just done. Add the chopped Bacon, Baked Beans, and Sauce to the skillet. Stir this until it becomes well mixed and comes to a boil. Take it off of direct fire (think low to medium heat) and layer out the biscuits on top of the Meat and Bean mixture. Cover and cook for 10 minutes or until the biscuits are golden, brown, and delicious.
3 Cups Flour
2 Tablespoons Baking Powder
Dash of salt
3 Tablespoons Fat, either oil, lard, or butter

Bannock Bread is one of the most famous and easy camping recipes in the world. Some eat it as dessert, some eat it for breakfast, others share it as a snack. Either way it is a perfect microcosm for simple campfire cooking.
Making Bannock Bread is all about feel. The more you make it, the better you get. Start off by adding all the ingredients, except the water, in a bowl. Mix this with your fingers. You want the dough to feel crumbly, like breadcrumbs. Don't use the palm of your hand, instead just use your fingers; over-mixing produces gluten and that is bad.
Now is the time for the water. Slowly add some water and then mix with your fingers. You're looking for a dough that's soft and malleable. Odds are you will not need more than 2/3 cup of water, so stop there. Keep mixing the dough, with your fingers, until it holds together and seems sticky and bouncy at the same time.
For cooking you can add it to a skillet with a little bit of oil or butter and cook each side until it's nice and crispy. Or, for the kids, you can take some dough and wrap it around your perfect Marshmallow roasting stick and have them cook it over an open fire. Just make sure you work the dough so it sticks and doesn't fall while cooking.

2 Cups Corn Bread Mix
½ Cup Water
½ Cup Canned Corn, Rinsed and Drained
2 Tablespoons Sugar
¼ Cup Cooking Oil
These tasty treats are good for breakfast, lunch, dinner, or just a snack. Add the Corn Bread Mix and the Sugar into a bowl and mix. Then slowly add the water and keep mixing. While you want constant mixing, you do not want to over-mix. Next, add the drained Canned Corn and give it one more mix.
The secret to making Fritters is to make sure the Cooking Oil is super hot when we start. Start off with a skillet and add a little bit of oil to cover the bottom, it'll probably be around one-fifth of the ¼ Cup of Cooking Oil. Ladle some of the batter into the oil and cook until crispy on the bottom side, about 3 minutes. Then flip and cook for another 3 minutes. Drain them on paper towels as you finish off the rest of the batter.

1 Can of Biscuits (the spring loaded kind)
¼ Cup Oil for Frying (vegetable oil is good)
1 Cup of Sugar
2 Tablespoons Cinnamon
These Cheat Doughnuts are the perfect thing when you want a hot dessert after a long day hiking and exploring. First put some Oil in a skillet and get it hot. While that's happening you want to pop out your biscuits and cut holes out of them so they look like doughnuts. If you want, you can fry these holes up after you finish your doughnuts so you're not wasting anything.
Next slide the biscuits in the Oil and let them cook until the bottom is golden and delicious, usually around 2 or 3 minutes. Try not to the move the biscuits around too much as they fry because they can get sticky. Flip them and continue cooking them until done, usually another 3 minutes.
After they are done, remove them from the Oil and let them drain for 30 seconds on a paper towel. Once they are drained add the Sugar and the Cinnamon to a paper bag. Place the Doughnuts in the bag and give it shake. Now you have delicious and sweet Doughnuts that took less than 10 minutes to make. That's what I call an easy camping meal!

1 Package Yellow Cake Mix
2 Cans Sliced Peaches, in syrup
1 Stick Butter
1 Package Shortbread Cookies
Cinnamon to taste
If you have a Dutch Oven liner, I'd recommend using it. If not, you can just grease your Dutch Oven. On the bottom of your Dutch Oven, or liner, you want to arrange the Shortbread Cookies so they're flat, covering the bottom. Break up some the ones you have left to make sure there is complete coverage.
Next you want to empty out your 2 cans of Sliced Peaches. The syrup is very important here! I would not try this recipe without access to the Syrup. Spread the Peaches out so it is even.
Empty the Cake mix out on top of the Peaches. Try to create another even layer. Sprinkle the Cinnamon on top of that.
Take the Butter and cut it up into 10 thin slices and arrange it out on top of the Cake Mix. Put the lid on the Dutch Oven and set it onto some coals. Take some extra coals and place them onto of the Lid of the Dutch Oven. Let it bake for an hour.

Orange cakes are an easy and fun dessert to make with your kids. The idea is simple : take a cake mix and bake it inside an orange. It's really fun to make, it's a unique tasting meal, and they can easily become a tradition amongst you and your family.
You will need:
1 cake mix (and all ingredients to take it from mix into batter)
4 medium sized oranges
When it comes to making your cake or brownie mix, you want to choose something you can make and mix up at the campsite. Obviously this will depend on the level of camping you are experiencing. You can easily find a few mixes that just need water.
Cut the tops off of the oranges and spoon out the fruit inside. Fill the oranges about 2/3rds full. Put the top back on and wrap in tin foil. You (an adult) can place these directly in the coals of a low fire. Or, if you have a grill over a fire, you can put them on top and turn them a few times. Time is going to depend on the fire and the size of the oranges, but in general it's going to be around 15 minutes.
The orange cakes not only gives you a fun and tasty dessert (which i know many adults enjoy along with children) but it teaches your kids to be resourceful and think around certain corners. Plus, they get to eat the oranges you spooned out, too! This recipe works well with white cake mix along with brownie mix and even muffin mix.
This is a great big breakfast. In this recipe we'll be putting the ingredients in a burrito, but it can be just as tasty served on a plate.
You will need:
1 bag of frozen hash browns (or 26 ounces of home made hash browns)
16 ounces bacon
1 medium onion diced
1 medium pepper diced
2 cups shredded cheese
For hardware we will need a cast iron pan, a lid, and a spatula. Because all of this is happening in one pan, over the fire, the kids can help add the ingredients to the pan as you cook it. They get to see these foods change with heat and time. To make this recipe a little simpler with more control, bust out your Eureka! camp stove. With a camping stove you will be able to more easily control the heat and grill up everything quickly. Teaching your kids about camping stove safety is another great lesson that they can benefit from for the rest of their camping life. Now on to the cooking... Start off by cooking your bacon. You can do sausage if you want, instead. Cook until the bacon is just done, do not over cook it. Remove the bacon but leave in the tasty grease. Now add the hash browns and cook until they are nice and brown. Because you are cooking on a cast iron pan over a direct fire you need the potatoes to crisp up before you toss them around or they will stick too much. Cook for five minutes before flipping. Once the potatoes are done you can add the chopped peppers and onions. You'll only need to cook them for a few minutes. As that is cooking you want to mix your 12 eggs. If you want, you can add a splash of milk or water, but i don't think it needs it. Crumble the bacon and add it back into the pan. Now add the eggs. Don't over mix, just make sure the eggs don't stick. Once the eggs are almost done, add cheese on top and put the lid on. Let the residual heat finish cooking the eggs. As the eggs finish cooking, add some wraps to any warm place near the fire. We don't want direct heat, we just want to warm them up to make folding them easier. Add the eggs to the wrap and serve! Salsa, hot sauce, and sour cream are all good extras to add.

For spider dogs all you need is a grill and some hot dogs. On each end of each hot dog, cut straight down cutting the tip in half. Turn the dog 90 degrees and cut it again. Go about an inch down on each side. When the dogs cook on the grill, the four segments of the dog will curl and pull away, making for a spider looking hot dog. Serve up with condiments and kids will actually have fun while eating and cooking.
For crescent dogs are a fun little way to make dogs a little fancy. All you need is crescent roll dough, the kind from the tube. Roll out the crescent sheet and simply wrap it around the hot dog. Use a skewer to pierce it length wise cook it over an open fire. The roll will puff up and get crispy while the dog is hot and juicy.
For swirl dogs you, an adult, want to skewer the dogs all the way through the middle, the long way. Once secured on the skewer you want to take a knife and cut it in a circular motion, going from top to bottom. When the dog is cooked up, it will spread apart making it look like a long swirl. These dogs can be severed on a hotdog bun with condiments and they'll be a favorite amongst the kids.

Camping while eating a vegan diet can be a very difficult experience. Sometimes we need to be flexible while we camp if we want to enjoy it. But being a vegan can be very important to a person, so important that if they can only choose camping or being vegan, they won't go camping. This recipe takes the sweetness of peppers and/or tomatoes, the heat of onions, and the bite of mushrooms and kisses them upon the fire. Add a little balsamic vinegar and you'll have a meal that you won't find at home. For the kabobs you can choose whatever vegetables you like. A good idea is Zucchini, Onion, Mushroom, and Pepper. You can wash and cut these vegetables at home and then seal them in a ziplock bag. You can leave some balsamic vinegar, salt, and pepper in the bag with the veggies to make them tart and savory. Cook them over an open fire and enjoy.
Nothing beats a stack of flapjacks cooked over an open fire. Luckily, vegan pancakes are actually a little bit easier to make at the campsite than normal pancakes as we are using soymilk instead of dairy, which can be hard to have at the campsite. The only 'trick' to this recipe is to flip the pancakes at the right time and quickly. Too early or too slow and you'll have a broken, gooey pancake. You'll need: 1 Cup All Purpose Flour (you can go Wheat flour if you want) 2 Tablespoons Sugar 2 Tablespoons Baking Powder 1 Cup Soymilk 2 Tablespoons Vegetable Oil Pinch of Salt Structure and procedure is very important with this recipe. Because we are using so much Baking Powder we need to assemble this very carefully. Take the Flour and the Baking Powder and mix it together. We want to make sure there are no lumps and the mixture looks light. Now add the Sugar and salt and mix again. In a separate bowl mix the soymilk and the vegetable oil. Now add the dry stuff to the wet stuff as you heat up your pan. Don't over mix but you do want it smooth. Simply cook your pancakes and serve with whatever you prefer.
Another classic meal at the campsite : burgers. We can make a pretty tasty vegan burger right at the campsite and then grill it up over a fire. The best thing about these burgers is that you can add basically anything you like and they'll hold their shape and still be delicious. Here's the core concept : One Can (15 ounces) Black Beans, drained and rinsed 1 Tablespoon Ketchup 1 Tablespoon Mustard 1 Tablespoon Hot sauce 1/3 cup Instant Oats Pretty simple core recipe, right? Well, from here you can add things like diced onions, jalapenos, extra sauces, broccoli, or whatever you want! When you add vegetables to this, make sure they are diced so the mouth-feel is still nice. Take the beans and mash them up real good. You want them to be mostly broken apart, but some chunks are okay. Add the rest of the ingredients and mix to combine. Now is the time to add the vegetables and extras. When you cook these you want a high heat. We want to get the outsides nice and crusty to it can take it's form without falling apart.
